Pork Carnitas

2-3 lb pork shoulder/bone in or pork butt
1 tbsp. salt and pepper
1 tbsp. oregano
1 tbsp. ground cumin
2 tbsp. olive oil
1 lime halved
4-5 cloves garlic, crushed
1 onion sliced in quarters
Mix olive oil and spices and make rub. Rub all over the pork and place in crockpot on low. Add your crushed garlic and onion, halve your lime and squeeze all over pork and drop rind into crockpot. Put lid on and cook for 8-9 hours on LOW.
Prepare your guacamole, salsa, and any other toppings you want
You can have your pork on a salad or roasted, cubed sweet potato.
Tortilla shells for the kids: turn your broiler on low. Place tortilla shells on cookie sheet and cover with your cheese. Place under broiler for a minute or two, until the cheese melts and gets bubbly.
