2 Cups of your choice of nuts (I like walnuts and pecans)

½ c. shredded, unsweetened coconut

¼ c. sunflower seeds or pumpkin seeds

2 tablespoons chia seeds 

2 tablespoons flax seeds

⅓ cup coconut oil (unrefined, cold-pressed)

⅓ cup local honey

2 tsp. Cinnamon

1 tsp. Pure vanilla extract

¼. Cup dried fruit, raisins, cranberries, blueberries (optional)

Pre-heat oven to 275 degrees. Line a baking sheet with parchment paper. 

In a food processor or with a mallet, chop your 2 cups of nuts roughly. In a large bowl mix the nuts, coconut, and seeds together. 

In a saucepan over medium heat, melt the coconut oil and the honey until bubbly, about 5 minutes, stir in cinnamon, and remove from heat, add vanilla. Once mixed together pour over your nut mixture. Blend all ingredients together until the nuts are totally coated. Spread evenly on baking sheet and bake for 25 minutes. Let cool. You may add dried fruit once you take it out of the oven, but this is optional.
