1 cup shredded, unsweetened coconut
2 tablespoons butter
2/3 cup peanut butter (make sure it is natural peanut butter, no added oils, just peanuts and salt)
**if your peanut butter is salt free, add a pinch of salt to your butter and peanut butter mixture
1 tsp. Vanilla
1/3 cup Monk fruit/Erythritol Sweetener (baking aisle at Wal-mart or Kroger-Swerve Brand)
½ cup sugar free chocolate chips (Lilly’s Brand or Enjoy life chocolate chips)
Melt the peanut butter and butter together, add the sweetener and vanilla to the peanut butter mixture. Add the coconut and mix together. Add the chocolate chips last.
Line a baking sheet with parchment paper. With a spoon, scoop out spoonfuls and space apart onto the sheet and place in the freezer for 10-15 minutes to harden.
Remove from the freezer and store in the refrigerator.Â
