1/2 c. Monterrey Jack Cheese
1/4 c. Gruyere swiss cheese (optional, you can use whatever cheese you want)
1/4 c. full fat cottage cheese
1 lb cooked sausage
**Add spinach or cooked diced onions and peppers!!
Butter or cooking spray for muffin tin
1 tsp. hot sauce
1 tsp. Salt and Pepper
Pre-heat oven to 350. Fill a deep pan or glass dish with 1/2 inch of water, place on lowest rack in oven, place in oven while it is pre-heating. Whisk eggs, hot sauce, salt and pepper, add cheese and blend in a nutri-bullet or blender, add cooled sausage. Grease muffin tin. Fill muffin tins about half way with egg mixture, place on rack above the pan filled with water. Bake 10-15 minutes.
